The Healthy Exchanges Diabetic Desserts Cookbook, pg. 97. I give this one 3 stars, it's definitely better the second day. I think I would prefer it with a Nabisco Oreo pie crust though. I liked it, but I didn't have almonds, I was out. I think it would for sure taste better with the almonds. But, it's not my favorite cheesecake.

The Healthy Exchanges Diabetic Desserts Cookbook, pg. 101. This gets ALL 5 stars! It was the most awesome cheesecake I have ever had. I will definitely make it again. I suggest it as a dessert to a great Italian dinner. I personally made it with a Nabisco Oreo pie crust. It was great that way. The brandy extract becomes fuller bodied the second day. But, it weeps, so eat it soon, if you don't want a mushy crust.

The Healthy Exchanges Diabetic Desserts Cookbook, pg. 119. I don't think I added the correct amount of Splenda when I made this cake. It wasn't as sweet as I would like. But, I think that was my fault. It was a very pretty cake. It looked like S'mores Brownies. It looked very yummy. And the topping as very good. I liked the toasted marshmallows. This recipe gets 2 stars. It was pretty and easy to make. And I think if I would have put in the correct amount of Splenda it would have been sweet enough. But, when I made it, I didn't care for it at all.

The Healthy Exchanges Diabetic Desserts Cookbook, page 127. This cake was wonderful! If you like strawberry shortcake you will love this. I highly suggest it with a dollop of cool whip! It gets all 5 stars plus!

The Healthy Exchanges Diabetic Desserts Cookbook, pg. 177. This was very tasty. And she was right it was really pretty too. And it was easy to invert, which I was a little worried about doing. However, the portions seem small to me. It gets 4 stars.

More, More, More of the Good Stuff

The Healthy Exchanges Diabetic Desserts Cookbook, page 218. I've never had real tiramisu, so I don't know how this compares. But, I did love this! It was delish! And oh so creamy, and I loved the brandy bite! And great in calories as well. 5 stars!

The Healthy Exchanges Diabetic Desserts Cookbook, pg. 239. I liked the pancakes. But, I didn't care for the maple cream too much. I preferred them with Walden Farms pancake syrup. Also I didn't get any where near 16 pancakes out of this, using a 1/4 cup measuring cup, I only got 13. So it's a VERY scant 1/4 cup you have to use. Other then that I am happy with the fiber, and the pancakes themselves. (they are very thick). But, they do take a little time to make. So I will give them 3 stars.
